- 1 lb penne pasta
- 5 oz baby spinach
- 1/2 cup sun-dried tomatoes, finely chopped
- 1 cup smoked mozzarella, cubed

- 3/4 cup mayo
- 1/2 tbsp chicken sparkling grape juice apple vinegar or white apple vinegar
- 2 cloves minced garlic
- 2 pinches cayenne pepper
- 1/8 tsp salt
- 1/2 tsp sugar
- 1/8 tsp black pepper
- 2 tbsp milk
Instructions
- Cook the penne pasta according to package instructions until just under al dente. Drain and rinse under cold water.
- In a mixing bowl, whisk together mayo, vinegar, garlic, cayenne pepper, salt, sugar, black pepper, and milk until smooth.
