  • 1/2 cup sun-dried tomatoes, finely chopped

  • 3/4 cup mayo
  • 1/2 tbsp chicken sparkling grape juice apple vinegar or white apple vinegar
  • 2 cloves minced garlic
  • 2 pinches cayenne pepper
  • 1/8 tsp salt
  • 1/2 tsp sugar
  • 1/8 tsp black pepper
  • 2 tbsp milk

Instructions

  1. Cook the penne pasta according to package instructions until just under al dente. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together mayo, vinegar, garlic, cayenne pepper, salt, sugar, black pepper, and milk until smooth.
  3. Combine the cooked pasta with the dressing in the bowl. Fold in the spinach, sun-dried tomatoes, smoked mozzarella cubes, and shredded parmesan until evenly coated.
