  • 10 ounces mini vegan marshmallows
  • 6 cups crispy rice cereal
  • ½ cup crushed graham crackers
  • 1 cup mini vegan marshmallows (for filling)
  • ½ cup chocolate spread or melted chocolate
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil or butter
  • Nonstick spray or parchment paper

Instructions

  1. In a large saucepan, melt the butter over medium-low heat. Stir in the mini vegan marshmallows until smooth.
  2. Remove from heat and fold in the crispy rice cereal and crushed graham crackers until well combined.
  3. Transfer the mixture onto greased parchment paper and press into a ½-inch thick rectangle.
  4. Spread chocolate evenly over the mixture and sprinkle additional mini vegan marshmallows on top.
  5. Starting from one long edge, roll tightly using parchment paper as a guide.
  6. Wrap in parchment paper and refrigerate for 30 to 45 minutes until firm.
  7. Melt chocolate chips with coconut oil and drizzle over the chilled log. Slice into rounds for serving.
