  • 1 pound boneless, skinless chicken breasts
  • 4 tablespoons avocado oil
  • 2 ¾ teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon Italian seasoning
  • 3 tablespoons salted butter
  • ½ medium sweet onion
  • 3 garlic cloves
  • 2 tablespoons all-purpose flour
  • ½ cup whole milk
  • ¾ cup chicken broth
  • 4 tablespoons cream cheese
  • 1 (5.3-ounce) container plain Greek yogurt
  • 1 (14-ounce) can artichoke hearts
  • 4 cups fresh baby spinach leaves
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 425°F.
  2. Halve the spaghetti squash lengthwise; scrape out seeds. Drizzle with avocado oil, season with salt and pepper, then bake for 45-60 minutes until tender.
  3. Pound chicken to even thickness; season with Italian seasoning and cook in a skillet until golden brown and cooked through.
  4. In the same skillet, melt butter and sauté onion and garlic until fragrant. Whisk in flour, then gradually add milk and broth until smooth.
  5. Stir in cream cheese and Greek yogurt; mix in artichokes, spinach, and cubed chicken; simmer until spinach wilts.
  6. Broil filled squash halves topped with mozzarella until bubbly.
