Ingredients
- 1 ½ lbs skirt steak
- 1 lb purple cabbage
- 1 large red pepper
- 1 large poblano pepper
- 1 red onion
- Olive oil
- 12 corn tortillas
- 6 oz queso fresco
- ½ cup freshly squeezed orange juice
- 2 tsp orange zest
- 1 (7oz) can chipotle peppers in adobo sauce
- 2 tbsp honey
- ¾ cup neutral oil (such as safflower)
Instructions
- Preheat the oven to 425°F (220°C).
- Roast halved peppers and onion on a sheet pan drizzled with olive oil for 35-40 minutes until tender. Roast cabbage on another pan for 25-30 minutes until caramelized.
- Prepare the steak by letting it rest at room temperature for 30 minutes before cooking.
- Blend orange juice, zest, chipotle peppers, honey, and oil in a food processor until smooth to create the chipotle sauce.
- Sear the seasoned skirt steak in a cast iron skillet over medium-high heat until cooked to your preference, then let it rest before slicing.
- Assemble tacos by layering roasted cabbage slaw, sliced steak, and drizzle with chipotle sauce in charred tortillas.
