Ingredients
- 1 pound boneless skinless chicken
- ½ onion, chopped
- 1 red bell pepper, cut into strips
- 2 tablespoons red curry paste
- 2 tablespoons ginger, minced
- 2 garlic cloves, minced
- 1 can coconut milk
- 2 tablespoons lime juice
- 2 tablespoons soy sauce
- 5–6 ounces rice noodles
Instructions
- Boil water in a pot and cook the rice noodles according to package instructions until al dente. Drain and set aside.
- Cut the chicken into strips. In a large skillet over high heat, add the chicken and cook until browned on both sides.
- Stir in the chopped onion and red curry paste; add bell pepper strips, garlic, and ginger. Cook for about 1 minute.
- Pour in the coconut milk and mix well.
