  • 1 ½ cups graham cracker crumbs

  • 6 tbsp unsalted butter (melted)
  • 2 (8 oz) packages cream cheese (softened)
  • ½ cup granulated sugar
  • ¼ cup sour cream
  • ½ tsp vanilla extract
  • 2 large eggs (room temperature)
  • For topping: 1 ½ cups fresh strawberries, 5 tbsp sugar, 3 tbsp water, 1 tbsp lemon juice, 2 tsp cornstarch

Instructions

  1. Preheat the oven to 350°F. Line an 8×8 or 9×9 inch baking pan with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of the prepared pan.
  3. In a large bowl, beat softened cream cheese, sugar, sour cream, and vanilla until smooth. Add eggs one at a time on low speed until just combined.
  4. Pour the filling over the crust and bake for about 25-35 minutes until slightly jiggly in the center. Cool to room temperature before refrigerating for at least 3-4 hours.
  5. For the strawberry topping, combine strawberries, sugar, water, lemon juice, and cornstarch in a saucepan over medium heat until thickened.
