  • Red bell pepper (1, thinly sliced)
  • Sweet corn (2 ears, cut into 1-inch disks)
  • Yellow onion (3/4 cup finely diced)
  • Red potatoes (2 1/2 cups diced)
  • Zucchini (1 1/4 cups sliced)
  • Olive oil (5 tablespoons)
  • Dried oregano (1 tablespoon)
  • Dried parsley flakes (1 tablespoon)
  • Paprika (1 teaspoon)
  • Garlic powder (1 teaspoon)
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high (450°F) or oven to 425°F. Prepare four large sheets of heavy-duty foil by lightly spraying them with cooking spray.
  2. Prepare the vegetables: slice the red bell pepper, cut corn into discs, dice the onion, chop the potatoes into bite-sized pieces, and slice the sausage into coins.
