  • 12 ounces uncooked pasta (gluten-free if needed)
  • 2 tablespoons balsamic vinegar
  • 2 cups halved cherry tomatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Fresh basil leaves
  • Salt and pepper to taste
  • 1 tablespoon pesto
  • 1 teaspoon honey
  • Pinch red pepper flakes
  • 3 tablespoons shredded Parmesan cheese
  • Balsamic glaze for garnish (optional)

Instructions

  1. Marinate the chicken in balsamic vinegar, olive oil, honey, red pepper flakes, salt, and pepper for at least 30 minutes.
  2. Cook pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  3. Grill marinated chicken over medium-high heat for about 6-7 minutes per side until fully cooked. Let rest before slicing.
  4. In the same pot used for pasta, sauté garlic in olive oil, add cherry tomatoes, then toss in cooked pasta and chopped basil.
  5. Serve topped with sliced grilled chicken and garnish with additional basil and balsamic glaze if desired.
