- 2 cups cooked chicken, diced
- 1 (14 oz) can pineapple tidbits, drained (reserve juice)
- 8 oz rotini or bowtie pasta
- 1 red bell pepper, diced
- ½ cup shredded carrots (optional)
- 2 green onions, sliced thin
- ½ cup mayonnaise
- ¼ cup sour cream
- ⅓ cup reserved pineapple juice
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1 teaspoon honey
- ¼ teaspoon garlic powder
- Salt & pepper, to taste
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
- In a mixing bowl, whisk together mayonnaise, sour cream, reserved pineapple juice, Dijon mustard, apple cider vinegar, honey, garlic powder, salt & pepper until smooth.
- In a large bowl, combine cooled pasta with chicken, pineapple tidbits, red bell pepper, green onions, and shredded carrots if desired.
- Drizzle dressing over the pasta mixture and gently mix to coat evenly.
- Refrigerate for at least one hour before serving to allow flavors to meld.
