- 1 1/2 cups medium grain rice
- 3 5 oz. cans Tuna packed in olive oil (drained)
- 3 Tablespoons low sodium soy sauce
- 2 teaspoons rice vinegar
- 1 1/2 teaspoons honey
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 1 large cucumber (sliced)
- 2 avocados (pitted and sliced)
- 2 green onions (green parts sliced thin)
- Pickled ginger (for serving)
- Toasted sesame seeds (for garnish)
- 1/4 cup mayonnaise
- 1 Tablespoon sriracha (more or less, to taste)
- Squeeze of lime juice
Instructions
- Cook 1 1/2 cups medium grain rice in water until tender.
- In a bowl, combine drained tuna with soy sauce, vinegar, honey, garlic, and ginger.
- Heat the tuna mixture in a skillet for 2–3 minutes.
- Whisk together mayonnaise and sriracha for the spicy mayo.
